Ingredients:
– 2 cups all-purpose flour
– 2 teaspoons baking powder
– 1 1/2 teaspoons baking soda
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– 1/2 teaspoon salt
– 1 cup granulated sugar
– 1 cup packed brown sugar
– 1 cup vegetable oil
– 4 large eggs
– 2 teaspoons vanilla extract
– 3 cups grated carrots (about 4 large carrots)
– 1 cup crushed pineapple, drained
– 1/2 cup chopped walnuts or pecans (optional)
– Cream cheese frosting (see below)
Cream Cheese Frosting:
– 1/2 cup unsalted butter, softened
– 8 oz cream cheese, softened
– 4 cups powdered sugar
– 1 teaspoon vanilla extract
Method:
1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or one
9×13-inch baking pan.
2. In a medium bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg,
and salt. Set aside.
3. In a large mixing bowl, beat together the granulated sugar, brown sugar, and vegetable oil
until well combined.
4. Add the eggs individually, stirring thoroughly after each addition. Then, mix in the vanilla
extract.
5. Slowly add the dry ingredients to the wet ones, stirring until they're just mixed together.
6. Fold in the grated carrots, crushed pineapple, and chopped nuts (if using) until evenly
distributed.
7. Pour the batter into the prepared pans, spreading it out evenly.
8. Bake in the preheated oven for 25-30 minutes for round pans or 35-40 minutes for a
rectangular pan, or until a toothpick inserted into the center comes out clean.
9. Remove from the oven and allow the cakes to cool in the pans for 10 minutes before
transferring them to a wire rack to cool completely.
Cream Cheese Frosting:
1. In a large mixing bowl, beat together the softened butter and cream cheese until smooth and
creamy.
2. Gradually add the powdered sugar, one cup at a time, beating well after each addition until
smooth.
3. Stir the vanilla extract until it mixes completely.
Assembly:
1. Once the cakes have cooled completely, spread a layer of cream cheese frosting over the top
of one cake layer.
2. Place the second cake layer on top and frost the top and sides of the cake with the remaining
frosting.
