2 cups (280g) all-purpose flour
2 ½ teaspoons baking powder
1 teaspoon salt
3 tablespoons sugar
4 tablespoons (60g) butter, very cold and in small pieces
1 egg, cold
½ cup buttermilk
For serving:
butter
jam
Line a baking sheet lined with parchment paper.
Preheat oven to 190ºC.
In a large bowl put flour, baking powder, salt and sugar.
Mix lightly with your hand or fork.
Add your cold butter on top and start working it into the flour mixture. To resemble bread crumbs.
Mix it with the dry ingredients.
Lightly beat the egg in a small bowl.
Make a well in the middle, and add the egg and half the buttermilk.
With a fork or spoon, lightly stir and begin to incorporate the flour.
As you mix you mgiht need to add the rest of the buttermilk a little at a time.if it becomes too dry.
Transfer to a clean surface or counter that is lightly dusted with flour.
Mix well but avoid it to the point where the dough looks to firm like pizza dough, you just want the dough to come together and hold well.
Roll or press down the whole mixture about 1-inch thick.
You can use a dough cutter or a glass rim to make circular shapes.
If there are remaining pieces add into one another and try make a circular flat shape.
Then bake for 20 minutes or so, until puffed, dry, and a bit golden.
Enjoy with butter and jam.
